One-Pan Sausage & Sweet Potato Bake
Healthy & High Protein • Easy One-Pan Dinner
Ingredients
- 1 lb pre-cooked sausages (kielbasa, chicken sausage, or smoked sausage), sliced into rounds
- 3 medium sweet potatoes, peeled and diced into 1-inch cubes
- 1 large yellow onion, chopped
- 2 tbsp olive oil (or avocado oil)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped (optional for garnish)
Instructions
- Preheat your oven: Preheat your oven to 400°F (200°C) and lightly grease a large baking sheet or baking pan.
- Prep the ingredients: Place the diced sweet potatoes and chopped onions directly onto the pan.
- Season: Drizzle olive oil evenly over the sweet potatoes and onions. Sprinkle with garlic powder, smoked paprika, dried oregano, salt, and pepper. Toss everything well until evenly coated.
- Add the sausage: Spread the sliced sausages evenly among the sweet potato and onion mixture on the pan.
- Bake: Place in the oven and bake for 30 to 35 minutes, stirring halfway through, until the sweet potatoes are tender and fork-friendly and the sausage edges are nicely browned.
- Serve: Remove from the oven, garnish with fresh chopped parsley if desired, and serve hot!
Chef's Tip:
Make sure not to overcrowd the pan so that the sweet potatoes roast and caramelize rather than steam!
