Ingredients

  • 1.5 lbs chicken breast, cut into bite-sized pieces
  • 1 red bell pepper, sliced into strips
  • 1 green bell pepper, sliced into strips
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1/3 cup soy sauce (or tamari)
  • 2 tbsp honey or brown sugar
  • 1 tbsp olive oil (plus extra for the pan)
  • Sesame seeds and chopped green onions for garnish

Instructions

Step 1: Prep the Sauce

In a small bowl, whisk together the soy sauce, honey (or brown sugar), minced garlic, and a splash of water until well combined. Set aside.

Step 2: Cook the Chicken

Heat olive oil in a large skillet or cast-iron pan over medium-high heat. Add the bite-sized chicken pieces, season with salt and pepper, and cook until golden brown and cooked through (about 6-8 minutes). Remove chicken from the skillet and set aside.

Step 3: Sauté the Veggies

In the same skillet, add a little more oil if needed. Toss in the sliced onions, red bell peppers, and green bell peppers. Sauté for 4-5 minutes until tender-crisp.

Step 4: Combine and Simmer

Return the cooked chicken back to the skillet with the vegetables. Pour the prepared sauce mixture all over the top. Let it simmer for 2-3 minutes until the sauce thickens and coats everything nicely.

Step 5: Garnish and Serve

Remove from heat, garnish with sesame seeds and freshly chopped green onions[span_3](start_span)[span_3](end_span). Serve hot straight from the skillet and enjoy your low-cleanup meal[span_4](start_span)[span_4](end_span)!

Chef's Notes:

Using a cast-iron skillet not only gives this dish amazing flavor and caramelization, but it also makes cleanup remarkably fast since everything is cooked in just one pan[span_5](start_span)[span_5](end_span)!
